Pumpkin pachadi is a traditional Kerala-based dish which is easy to make and healthy. I learnt this recipe from my mother.
Pumpkin Pachadi Recipe:Ingredients
- Pumpkin – 300 gm
- Coconut, grated – 1 cup
- Red chillies – 4
- Mustard seeds – 2 tsp
- Tamarind – small ball
- Salt – 1 tsp
- Asafoetida – a pinch
Cooking Method-
- Boil yellow pumpkin in tamarind water and add salt and turmeric powder.
- Allow it to boil for 10 minutes till the tamarind's raw smell fades.
- Grind coconut, red chillies and mustard seeds into a fine paste.
- Add the paste to the boiled pumpkin and cook the mixture for five minutes.
- Season mustard seeds, red chillies and asafoetida and add to the mixture.
- Garnish with curry leaves.
